So, this week is short a couple days worth of recipes. When I started this challenge, I forgot that I was flying back to Buffalo at the end of the month! Travel definitely makes it difficult to maintain this diet, but I had a blast in Buffalo, and have to admit it was too hard to resist special vegan cupcakes bought just for me! Week one was a success! I am having so much fun creating new recipes and re-inventing old recipes. I think the only downside is the amount of dishes that need to be done every day! Thankfully I have some help with the dishes and taste test the recipes. The only food I have been missing is my Franks's Red Hot and organic ketchup. So here we go....week 2!
